Volare Ristorante's Soups Offer a Warm Respite from Cold Weather

During the past winter, it was Volare's soups that were receiving praise from customers. Zenet Schissler recently brought Volare Ristorante to the attention of Ron Mikulak, author of Cook's Corner at the Courier Journal. She wrote saying that she had thoroughly enjoyed the orange tomato soup there.

Following Schissler's praise, Volare's chef, Joshua Moore, shared several of his soup recipes with Ron Mikulak. Moore shared seasonal recipes like his butternut squash bisque. These seasonal recipes help to ensure that ingredients will be readily available.

Volare's menu follows the seasons closely. It is important to use recipes with ingredients that are in season; doing this guarantees that the ingredients will be as fresh as possible. Volare's success is due in part to this careful planning of their menu.
